Watatsumi is an exciting new high end Japanese restaurant at the prestigious Club Quarters Hotel off Trafalgar Square in the very heart of London. Watatsumi aims to take the diner on an exciting culinary journey that goes beyond sushi and sashimi. Traditional Japanese ingredients and techniques are a vital part of the Watatsumi dining experience but so too are bold new recipes, contemporary flavour combinations and dazzlingly innovative presentation.
Watatsumi's menu perfectly balances both traditional and contemporary elements of Japanese cuisine. The sushi bar offers all the classic sashimi, nigiri sushi, maki and temaki rolls that any lover of Japanese cuisine could wish for as well as a selection of luxurious ‘tartars' and ‘tataki' dishes.
The hot kitchen will serve classic tempura, oshitashi and selection of yakitoris alongside hot tofu and Japanese mushroom salad, wagyu beef with three exceptional sauces and the sautéed prawn and lobster dish that will leave you with a taste for more.
The ‘omakase' tasting menu is the perfect way to discover Watatsumi. This menu will showcase the kitchen team’s exceptional artistry married to the very best of seasonal produce. Watatsumi does not sell blue fin tuna.
The bar at Watatsumi is the perfect place for diners to enjoy an aperitif or digestif but is also a destination in its own right. Its cocktail list is an approachable collection of original modern drinks based on premium spirits, liqueurs, fresh fruit and herbs. Its signature drink, the Watatsumi Mojito is no ordinary mojito; a dash of blueberry syrup in with the limes, fresh mint leaves and rum, gives it a hint of sweetness and bold colour. Japanese beers, a dozen wines by the glass, virgin cocktails and full range of spirits is also available.
Peter Makohus, head chef at Watatsumi, discovered his culinary calling early, starting catering school at the age of just 14. After four years of college, the Slovakia-born chef progressed to Slovakia’s best hotels in the Tatra Mountains where he worked alongside chefs with experience of Michelin-starred restaurants all over Europe and beyond. Inspired by their craft and creativity, he moved to the UK in 2004 to pursue a career in cooking at the highest level. After a year at the George Vaults in Kent, he moved to London in order to further his interest in Asian cuisine and take up a position at the Michelin-starred Nobu on Park Lane. He left Nobu in 2008 to join the opening team of Buddha Bar London where he went on to run the kitchen before it closed earlier this year. After a short break to rest, recharge and get married, Peter returns to the kitchen for the launch of Watatsumi at the Club Quarters Hotel.
